Apricot Chicken with Buttered Lemon Couscous

Ingredients

Serves 4

APRICOT CHICKEN
  • 1 pkt MAGGI Apricot Chicken Recipe Mix
  • 2 tsp olive oil or cooking spray
  • 500 g skinless chicken breast fillet, sliced
  • 1 onion, sliced
  • 1 can apricot halves, drained, reserve liquid, 425g
BUTTERED LEMON COUSCOUS
  • 1 cup water
  • 1 tsp MAGGI Chicken Stock Powder
  • 1 cup couscous
  • 1½ tbsp unsalted butter, cut into small pieces
  • ¼ cup currants
  • 1 tsp lemon zest

APRICOT CHICKEN:
  1. Prepare I Apricot Chicken Recipe Mix following the method on the packet.
BUTTERED LEMON COUSCOUS:
  1. Place the water and Chicken Stock Powder in a saucepan and bring to the boil. Remove from the heat.
  2. Stir in the couscous using a fork, then cover the pan and stand for 2 minutes.
  3. Add the remaining ingredients and stir with a fork until well combined.
