Apricot Chicken with Buttered Lemon Couscous

- 1 pkt MAGGI Apricot Chicken Recipe Mix
- 2 tsp olive oil or cooking spray
- 500 g skinless chicken breast fillet, sliced
- 1 onion, sliced
- 1 can apricot halves, drained, reserve liquid, 425g
- 1 cup water
- 1 tsp MAGGI Chicken Stock Powder
- 1 cup couscous
- 1½ tbsp unsalted butter, cut into small pieces
- ¼ cup currants
- 1 tsp lemon zest
Prep time Cook time
- Prepare I Apricot Chicken Recipe Mix following the method on the packet.
- Place the water and Chicken Stock Powder in a saucepan and bring to the boil. Remove from the heat.
- Stir in the couscous using a fork, then cover the pan and stand for 2 minutes.
- Add the remaining ingredients and stir with a fork until well combined.
