  1. Heat oil in a large saucepan. Add the onion and cook over medium heat for 3 minutes or until soft. Add the garlic, ginger, chilli and turmeric and stir-fry for about 30 seconds.
  2. Gradually add the evaporated milk and combined stock powder and water to the pan, bring to the boil, reduce heat slightly and add tofu and prawns.
  3. Simmer for 2-3 minutes or until the prawns are just cooked.
  4. Meanwhile, cook the noodles following packet directions and divide between 4 bowls. Pour the soup over, dividing the tofu and prawns evenly; top with coriander.
