Banana, Date & Coconut Bread with Pan Fried Banana

  • 1 tbsp butter
  • 2 bananas, sliced
  • 1 tbsp brown sugar


Prep time       Cook time 

  1. Preheat oven to 180°c/160°c fan forced. Grease and line a 20cm x 10cm loaf pan.
  2. Combine flour, sugar, coconut and dates in a large bowl. Pour over combined eggs and Evaporated Milk and banana. Mix well; pour into prepared pan. Bake 45 minutes or until an inserted skewer comes out clean.
  1. Melt butter in a frying pan over medium heat; add bananas and sugar, cook 1-2 minutes per side or until golden.
  2. Slice 4 pieces of bread. Toast. Serve with greek style yoghurt, honey and pan fried bananas, as desired.
TIP: Wrapped bread keeps well for 2 – 3 days. Can be frozen.
