  • 1½ cups (135g) UNCLE TOBYS Traditional Oats
  • 2 cups (500mL) buttermilk, slightly warmed
  • 125g butter, softenend
  • ¾ cup (165g) brown sugar
  • 2 eggs
  • 1½ cups (225g) self raising flour
  • 1 cup mashed banana, (about 3 medium bananas)


Prep time       Cook time 

  1. preheat oven to 180°c/160°c fan forced. grease and line a 20cm round cake pan.
  2. combine UNCLE TOBYS traditional oats and buttermilk in a medium bowl; soak 15 minutes.
  3. meanwhile, cream butter and sugar until light and creamy; add eggs, one at a time, beating well after each addition. fold in half the flour, banana and soaked oats; mix well. fold through remaining flour, banana and soaked oats.
  4. pour into prepared pan. bake 60 minutes or until a skewer inserted into the centre comes out clean. cool 10 minutes in pan before turning out onto a wire rack to cool completely.
