Serves 6

  • 1½ cups plain flour
  • 125 g unsalted butter
  • 1 egg yolk
  • 2 tbsp water


Prep time       Cook time 

  1. Preheat oven to 200°C.
  2. Sift flour into bowl, rub in butter until mixture resembles breadcrumbs. Add egg yolk and enough water to mix to firm dough.
  3. Roll dough out to fit 23cm quiche pan, refrigerate 20 minutes. Bake 12 minutes.
  4. Melt extra butter in pan, add onion, cook 2 minutes, add spinach, cook 1 minute. Spread spinach mixture over pastry, crumble cheese over spinach.
  5. Beat together eggs, CARNATION Light & Creamy Evaporated Milk and pepper to taste. Pour over spinach, bake 30-40 minutes until golden. Serve with a salad.
