Prep time       Cook time 

  1. Heat oil in large fry pan, add onion, garlic and bacon, cook over low heat 5 minutes or until softened.
  2. Blend cornflour with 1 tablespoon of Evaporated Milk. Add blended cornflour, remaining Evaporated Milk and tomato paste to pan; stir until mixture boils and thickens slightly. Remove from heat, stir in baby spinach leaves.
  3. Serve with al dente pasta or over grilled chicken breasts.
